Harvest

Vinification
Destemming-crushing; alcoholic fermentation with maceration on the skins for at least 12 days with various repassings and delestage. Malolactic fermentation before ageing in wood.
Refinement
In French oak barriques and tonneaux of first and second passage for 18 to 24 months, assembled in 18 hl barrels. Further ageing in the bottle for a few months

Colour
Ruby red tending to garnet
Perfume
Intense, ethereal, slightly oaky, it offers ripe fruit complemented by hints of spice. Tertiary aromas of vanilla, pipe tobacco, liquorice, cocoa, leather.
Taste
Dry, savoury, warm, rich in tannins that have been softened by ageing in barriques and tonneaux; remarkably persistent with a plum and cherry aftertaste
Pairings
Important red meat dishes and roasts. Becomes a meditation wine with ageing.
